Arabic Soup

Preparation Time:
5 minutes
Cooking Time:
30 minutes

  1. 1/2 cup red lentils
  2. 1/2 onion, coarsely chopped
  3. 1/2 cup vermicelli noodles
  4. 2 cups water
  5. 2 bouillon cubes 
  6. 1 tsp. Worcestershire sauce.
  7. 1/2 cup frozen peas
  8. cooking spray
Cooking Directions:
  1. Put lentils in a pan and cover with water.
  2. Set stove to medium heat and let hem soak for about 10 minutes.
  3. While that is going on, set another 2 quart pan on another burner and spray with nonstick spray. Let oil get hot and add the chopped onion and the vermicelli and stir until browned.
  4. Pour the red lentils into a strainer to get rid of the soaking water. and add to the onion mixture. Continue stirring.
  5. Add 2 cups water and the bouillon cubes.
  6. Cook for 10 more minutes over medium heat.
  7. Add the Worcestershire sauce and peas, and season to taste with salt and pepper.
