Potato Mash With Sauerkraut



Ingredients:
  1. Potatoes 
  2. any other winter vegetable you have
  3. I used butternut squash
  4. parsnips
  5. some left over honey roast carrots
  6. and a jar or sauerkraut.
  7. 2 small red onions
  8. and as much garlic as you like.
  9. I used rosemary
  10. thyme
  11. basil
  12. oregano
  13. Jamaican spice mix
  14. Garam masala
  15. chili flakes
  16. salt and pepper
  17. Olive oil

Cooking Directions:
Mix the herbs, spices and salt with the oil. Score the vegetable and then rub the oil mixture all over making sure to get the bits of herb into the score marks on the veg. Pour in the rest of the oil mix over the top and add some crushed garlic. Put in microwave for 15 minutes. 
Gently fry the onions, spoon out as much sauerkraut as you like and fry. When the microwave pings roughly mash the veg into the oil and tip the sauerkraut mix on top.
