Carrot and Coriander Soup

Ingredients:
  1. 5 or 6 large carrots
  2. 1 small bag of chopped coriander
  3. 1 small onion
  4. 1 garlic clove
  5. 275ml vegetable stock
  6. oil
  7. salt
  8. Black pepper
  9. French Breach
Cooking Directions:
  1. Peel and chop the carrots in to small bits.
  2. Put some oil in a large pot and add the onions and carrots, cook until soft.
  3. Add the garlic and the vegetable stock and the coriander.
  4. Simmer on 4 for 20 minutes.
  5. When soup is cooked get a hand blender and blend until the soup starts to thicken.
  6. Add some slat and black pepper.
  7. Serve with French bread.
