Chicken Fajita Omelet


Ingredients:
  1. 3 eggs
  2. 1 small chicken breast
  3. 1/2 a red pepper
  4. 1/2 an onion
  5. 2 tbsp olive oil
  6. Small handful of grated cheddar cheese
  7. 1 tsp ground cumin
  8. A pinch of chili powder (optional)
  9. Fresh coriander leaves (optional)
  10. BBQ sauce
  11. Salt and pepper

  1. Dry pasta, any kind will do
  2. Olive oil, enough to nicely coat the bottom of the pan
  3. Garlic, I'm a garlic junkie so I like lots, but for the average person 4-6 cloves should do, minced
